The secret to a great meal lies in harmony. To enhance our current menu, we offer a selection of four vintages (3.5 oz) chosen for their ability to interact with our flavors, at a price of $40 per person.
This is how your dishes and our wines meet:
- Salmon Gravlax & Escolha (Portugal) The fat of the salmon and the subtle bitterness of the coffee were a response to the question. This fresh and lemony white wine brings a minerality that balances the entry with precision.
- Pan-fried halibut cheek & Carole cuvée (Chardonnay / Gros Manseng) To accompany the melting texture of the fish and the creaminess of the beurre blanc, we have chosen a round wine. Its stone fruit notes prolong each bite with elegance.
- Duck confit ravioli & Soplo (Grenache, Spain) The delicacy of the duck and the acidity of the cranberry call for suppleness. This Spanish Grenache offers aromas of small red fruits that respect the finesse of the duck confit without crushing it.
- Beef Wellington & Languedoc de Pierre (Cabernet Sauvignon & Franc) An exceptional dish deserves a solid structure. This powerful red with notes of blackcurrant supports the richness of morels and the tenderness of beef for a masterful finish.
